Cowboy Caviar Recipe

Cowboy Caviar is a fresh and flavorful dip made with beans, corn, and vibrant veggies, all tossed in a tangy, zesty dressing. It’s perfect as a dip for tortilla chips, a topping for tacos, or a healthy side dish!

Ingredients

For the Salad:

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (15 oz) can black-eyed peas, drained and rinsed

  • 1 ½ cups cherry tomatoes, diced

  • 1 cup sweet corn (fresh, canned, or frozen)

  • ½ red onion, finely chopped

  • 1 bell pepper (red, yellow, or green), diced

  • 1 jalapeño, finely chopped (optional, for heat)

  • 1 avocado, diced (add just before serving)

  • ¼ cup fresh cilantro, chopped

For the Dressing:

  • ¼ cup olive oil

  • 2 tbsp red wine vinegar (or lime juice)

  • 1 tbsp honey (or maple syrup for a vegan option)

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the black beans, black-eyed peas, tomatoes, corn, onion, bell pepper, jalapeño, and cilantro.

  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, honey, chili powder, cumin, garlic powder, salt, and black pepper.

  3. Pour the dressing over the salad and toss until everything is evenly coated.

  4. Cover and refrigerate for at least 30 minutes to let the flavors meld.

  5. Just before serving, add the diced avocado and gently mix.

  6. Serve with tortilla chips, as a topping for tacos, or as a side dish. Enjoy!
